Chicken Ole

Ingredients:

8oz sour cream

2 10.5 oz can cream of chicken soup

12 white corn tortillas

8oz colby jack cheese

5-6 chicken breasts, cooked and cubed

1-2 4oz cans diced green chiles

1 red onion, chopped


Directions:

  1. Preheat oven to 350F

  2. Mix sour cream and soup together. Spread a thin layer of the mix on the bottom of a 9x13 in dish, just enough to cover the bottom.

  3. Cut tortillas in half. Layer half of the tortillas on the bottom of the dish. They will be slightly overlapping.

  4. Put 1/2 of the remaining sour cream/soup mix over the tortillas. Next layer half of the cheese .

  5. Add chicken, chiles, and onion. Repeat another layer with the rest of tortillas, followed by the rest of the sour cream/soup mix. Top with the rest of the cheese.

  6. Bake for 30 minutes or until bubbly
