Ingredients
1 egg
1 cup sugar
3 well ripened bananas
2 sticks unsalted butter, melted
2 cup flour
1 tsp. Baking soda
¼ tsp salt
Directions
1. Preheat oven to 350 degrees. Line muffin tin with cupcake wrappers.
2. In a large bowl, beat the egg. Add the sugar and continue beating until creamy. Pour in the melted butter and add the bananas. Stir in the dry ingredients.
3. Use a cookie or ice cream scoop to scoop the batter into the lined muffin tin. Bake muffins for about 20 minutes, depending on the oven. Muffins are done when they are slightly golden and when using a toothpick or butter knife they come out clean.
Yields roughly 18 muffins
